Breakfast Biscuits – Make Your Own Grab-and-Go Breakfast!
This week I’m excited to roll out another recipe, and my first breakfast recipe! Breakfast is my favorite meal of the day, so much so that I often make it at dinner time! I hope you enjoy these fluffy, meat-egg-and-cheese packed biscuits as much as I do!
I discovered the genius idea for these easy breakfast biscuits at another blog, Kitchen Dreaming. They are an all-in-one, on-the-go portable meal, filled with meat and eggs and cheese. They are great for everything from busy mornings, to weekend brunches, to lazy lake days, making this one of my favorite grab and go breakfast recipes!
After making my first batch, I knew two things:
- This is an awesome homemade, grab and go breakfast, that can be made in bulk ahead of time.
- I needed to swap out the biscuit dough recipe for something less crumbly. Hello, messy toddlers!
The Dough
I turned to a super easy biscuit dough recipe from one of my all-time favorite cookbooks: The America’s Test Kitchen Family Baking Book. If you haven’t heard of America’s Test Kitchen, they do dozens of tests on every recipe they produce. They break down the science of it, and then simplify it so that anybody can follow their techniques, with great results every time! Maybe it’s the science nerd in me that loves ATK so much…But their recipes are truly amazing.
I was going to link the Family Baking Book, but unfortunately it seems they no longer produce it. It looks like they’ve replaced it with the Cook’s Illustrated Baking Book, which I’m sure is equally amazing! (Cook’s Illustrated is a brand under the ATK umbrella.)
In addition to changing the dough recipe, I made a few other tweaks to streamline the process of making these biscuits!
What I Love About These Biscuits
- They’re easy!
- They can be made in bulk!
- They freeze well!
- They are endlessly customizable – fill in with your favorite cheese, meat, and even veggies!
- They are packed with protein, making them very filling!
All-In-One Breakfast Biscuits
Ingredients
- 2 c all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp sugar
- 3/4 tsp salt
- 1 c buttermilk or soured milk (see notes)
- 8 tbsp butter, melted and slightly cooled
- 1/2 lb sausage
- 6 eggs
- 1 c shredded cheese see notes
Instructions
- Preheat oven to 425°F. Grease a large baking sheet.
- Brown and drain sausage, making sure the sausage is finely crumbled. Add in eggs, stirring to scramble them in the pan. Salt and pepper to taste. Cook through; make sure they are mixed in with the sausage. Let cool slightly.
- Stir together the flour, baking powder, baking soda, sugar, and salt in a large bowl. In a separate bowl, stir together the buttermilk and butter (butter will form small clumps). Add the buttermilk mixture and the shredded cheese to the flour mixture; stir until just incorporated.
- Fold the sausage-egg scramble into the biscuit dough, just until incorporated.
- Drop dough in mounds onto the baking sheet. Bake 20-25 minutes, or until the biscuits are golden brown.
